Preparation
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper.
- In a large bowl, mix the pumpkin puree, brown sugar, granulated sugar, softened butter, egg, and vanilla extract until creamy.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in the chocolate chips.
Baking
- Scoop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them at least 2 inches apart.
- Bake for 10-12 minutes until edges are golden but centers are soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
