Ingredients
  

For the Sandwich
  • 2 slices slices of your favorite bread (sourdough or whole grain)
  • 1 cup shredded cooked chicken Use leftover cooked chicken to save time.
  • 1/3 cup BBQ sauce Choose your favorite BBQ sauce.
  • 1 cup shredded cheese (cheddar or Monterey Jack) Feel free to mix cheeses for variation.
  • to taste Butter For grilling.

Method
 

Preparation
  1. In a mixing bowl, combine the shredded chicken with BBQ sauce until well-coated. Adjust the amount of sauce based on your preference.
  2. On one side of each bread slice, spread a thin layer of butter to ensure a crispy exterior.
Assembly and Grilling
  1. On the unbuttered side of one slice of bread, layer half of the cheese, followed by the BBQ chicken mixture, then the remaining cheese.
  2. Top with the second slice of bread, butter side up.
  3. Heat a skillet over medium heat and place the sandwich in the skillet. Cook for about 3-4 minutes until the bread is golden brown.
  4. Carefully flip the sandwich and grill the other side for another 3-4 minutes until the cheese melts.
Serving
  1. Once both sides are crispy and the cheese is gooey, transfer the sandwich to a cutting board. Let it cool for 1-2 minutes before slicing in half. Serve immediately.

Notes

Pair with crispy sweet potato fries or a fresh side salad. For a drink, iced tea or lemonade complements the flavors well.
