  • 1 cup mixed vegetables (peas, carrots, and corn) Use any favorite mixed vegetables.
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free) Adjust according to taste.
  • 1 tablespoon sesame oil
  • 2 stalks green onions, chopped For garnish.
  • 1 egg optional, for extra protein Can be omitted for a lighter dish.
  • 1 tablespoon cooking oil For sautéing.

  1. Start by prepping your ingredients: Ensure your shrimp is peeled and deveined, your rice is cooked, and vegetables are chopped.

  1. In a large skillet or wok, heat a tablespoon of cooking oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  2. Toss in the shrimp and cook until they turn pink, about 2-3 minutes. Remove from the pan and set aside.
  3. In the same pan, add a little more oil if needed, and stir in the mixed vegetables. Cook for 2-3 minutes until they become tender.
  4. Add the cooked rice to the pan, breaking up any clumps. Stir the rice and vegetables together, allowing them to warm through.
  5. Push the rice mixture to one side of the pan. Crack the egg into the other side and scramble it until fully cooked, then mix it back into the rice.
  6. Pour in the soy sauce and sesame oil, tossing everything together to combine. Finally, add the shrimp back into the pan along with the chopped green onions. Give everything a good mix and cook for another minute until heated through.
  7. Serve hot and enjoy your delicious homemade shrimp fried rice!
