- Start by prepping your ingredients: Ensure your shrimp is peeled and deveined, your rice is cooked, and vegetables are chopped.
Cooking
- In a large skillet or wok, heat a tablespoon of cooking oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Toss in the shrimp and cook until they turn pink, about 2-3 minutes. Remove from the pan and set aside.
- In the same pan, add a little more oil if needed, and stir in the mixed vegetables. Cook for 2-3 minutes until they become tender.
- Add the cooked rice to the pan, breaking up any clumps. Stir the rice and vegetables together, allowing them to warm through.
- Push the rice mixture to one side of the pan. Crack the egg into the other side and scramble it until fully cooked, then mix it back into the rice.
- Pour in the soy sauce and sesame oil, tossing everything together to combine. Finally, add the shrimp back into the pan along with the chopped green onions. Give everything a good mix and cook for another minute until heated through.
