  • 4 cups broccoli florets, chopped
  • 1 cup raisins (or dried cranberries)
  • 1/2 cup sunflower seeds (or nuts of your choice)
  • 1/2 cup diced red onion
Dressing Ingredients
  • 1 cup light mayonnaise (or Greek yogurt) For a healthier option
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey Adjust based on sweetness preference
  • Salt and pepper to taste

Method
 

Preparation
  1. Rinse the broccoli florets in cold water. Chop them into bite-sized pieces and set them aside in a large mixing bowl.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until well combined. Taste and adjust the seasoning as needed.
  3. To the bowl of chopped broccoli, add the raisins, sunflower seeds, and diced red onion.
  4. Pour the prepared dressing over the salad ingredients. Gently toss until everything is well coated and mixed.
  5. Allow the salad to sit in the refrigerator for at least 15-20 minutes to let the flavors meld together before serving.

Notes

Store leftovers in an airtight container for up to 3 days. For best results, store dressing and salad components separately if freezing.
