Main Ingredients
  • 4 slices Sourdough bread Other types can be used, such as Italian or regular sandwich bread.
  • 8 oz Fresh mozzarella cheese Part-skim shredded mozzarella can be used if fresh is unavailable.
  • 1 medium Tomato Use ripe, juicy ones for best flavor.
  • 1/4 cup Fresh basil leaves Dry basil is not a good substitute.
  • 2 tbsp Butter For browning the bread.

Method
 

Preparation
  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. Place one slice of bread, butter side down, onto the hot pan.
  4. Layer mozzarella cheese over the bread, then add tomato slices, a sprinkle of salt, and fresh basil.
  5. Top with another slice of bread, buttered side up, and gently press down.
Cooking
  1. Cook for 2-3 minutes until golden, then flip and cook the other side until golden brown and melty.
  2. Let it sit for a minute, slice, and enjoy the cheese pull.

Notes

For the best result, go low and slow while cooking to avoid burnt bread and unmelted cheese. Use firmer bread to avoid sogginess. Add a swipe of pesto or balsamic glaze for extra flavor.
