Ingredients
  

Egg Mixture
  • 8 large large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheese (your choice: cheddar, mozzarella, or a blend) Use your favorite blend of cheeses.
Vegetable Mixture
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 1 cup diced potatoes (fresh or frozen)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
Meat
  • 2 cups cooked and crumbled breakfast sausage or meat substitute Use your preferred type of breakfast meat.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Stir in half of your cheese, along with the diced bell peppers, onion, potatoes, and desired spices. Ensure everything is nicely combined.
  4. Fold in the crumbled breakfast sausage or meat substitute, distributing it evenly throughout the mixture.
  5. Pour the mixture into a greased 9x13-inch baking dish and sprinkle the remaining cheese on top.
Baking
  1. Place the baking dish in the oven and bake for 30-35 minutes, or until the eggs are set and the top is bubbly and lightly browned.
  2. Let your casserole cool slightly before slicing. Serve warm with fresh herbs or a dollop of salsa on top.

Notes

Consider adding more veggies or spices for extra flavor. Allow to cool slightly before slicing to hold its shape. Perfect for brunch with sides like salad or fruit.
