- Start by boiling salted water in a large pot. Add the fettuccine and cook according to package instructions until al dente. Once done, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced onions, bell peppers, and minced garlic; sauté until softened and fragrant, about 3-4 minutes.
- Toss in the crawfish tails and cook briefly for about 2 minutes until they begin to heat through.
Making the Sauce
- Pour in the chicken broth and bring to a simmer. Lower the heat and gradually stir in the heavy cream, mixing well.
- Add the Cajun seasoning and Parmesan cheese. Stir until combined and the sauce thickens slightly, about 5 minutes.
Combining
- Add the cooked fettuccine to the skillet and gently toss to coat the pasta in the creamy sauce. Season with salt and pepper to taste.
Serving
- Plate the creamy crawfish fettuccine and garnish with chopped green onions. Enjoy!
