- In a large pot of salted boiling water, cook the pasta according to package directions. Drain and set aside.
- While the pasta cooks, season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the chicken and sauté for about 5-7 minutes on each side or until cooked through and golden brown. Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the chicken broth and heavy cream, stirring to combine. Bring to a simmer and allow to thicken slightly.
- Slice the chicken and return it to the skillet. Add the cooked pasta and Parmesan cheese, tossing to coat everything evenly in the creamy sauce.
- Garnish with fresh parsley and additional Parmesan cheese if desired. Enjoy immediately!
Notes
For variations, try using a mix of paprika, onion powder, garlic powder, and cayenne as a substitute for Cajun seasoning. Store leftovers in an airtight container in the refrigerator for up to 3 days.
