  • 2 pieces boneless, skinless chicken breasts
  • 8 oz fettuccine (or pasta of your choice)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • to taste Salt and pepper

Method
 

Cooking Instructions
  1. In a large pot of salted boiling water, cook the pasta according to package directions. Drain and set aside.
  2. While the pasta cooks, season the chicken breasts with Cajun seasoning, salt, and pepper.
  3. In a large skillet, heat the olive oil over medium heat. Add the chicken and sauté for about 5-7 minutes on each side or until cooked through and golden brown. Remove chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the chicken broth and heavy cream, stirring to combine. Bring to a simmer and allow to thicken slightly.
  5. Slice the chicken and return it to the skillet. Add the cooked pasta and Parmesan cheese, tossing to coat everything evenly in the creamy sauce.
  6. Garnish with fresh parsley and additional Parmesan cheese if desired. Enjoy immediately!

Notes

For variations, try using a mix of paprika, onion powder, garlic powder, and cayenne as a substitute for Cajun seasoning. Store leftovers in an airtight container in the refrigerator for up to 3 days.
