  • 1 can Rotel diced tomatoes and green chilies 10 oz can, includes juices.
  • 1 cup heavy cream For a lighter version, consider half-and-half.
  • 1 cup shredded cheddar cheese Gradually mix in for creamy texture.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste.
  • 1 tablespoon olive oil For cooking the beef.
  • Parsley or cilantro Optional garnishes.

Cooking Steps
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a wooden spoon—about 5-7 minutes.
  3. Once the beef is fully cooked, drain any excess fat. Add the garlic powder, onion powder, salt, and pepper. Stir well to combine.
  4. Pour in the Rotel tomatoes (with juices) and heavy cream. Stir until everything is well mixed and simmer for about 3-5 minutes.
  5. Gradually mix in the cheddar cheese, stirring until melted and creamy.
  6. Add the drained pasta to the sauce mixture. Gently toss to combine and ensure the pasta is coated in the creamy goodness.
  7. Remove from heat, garnish with optional parsley or cilantro, and serve hot!

Notes

Serve with garlic bread, simple green salad, coleslaw, or Mexican corn salad for perfect accompaniments. Feel free to add veggies like bell peppers or spinach for an extra health boost.
