  • 2 cups cooked, shredded chicken Use rotisserie chicken for quicker prep.
  • 2 cups fresh spinach, chopped Fresh spinach is recommended, but frozen can be used if drained well.
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese Feel free to swap for cheddar or gouda.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup breadcrumbs (optional for topping) For added crunch.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked, shredded chicken, chopped spinach, softened cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well-blended and creamy.
  3. Transfer the chicken mixture to a greased 9x13-inch baking dish and spread evenly.
  4. Sprinkle shredded mozzarella cheese over the top. For added crunch, add breadcrumbs if desired.
Cooking
  1. Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
  2. Remove the casserole from the oven and let it sit for a few minutes before serving.

Notes

This casserole can be stored in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) for about 15-20 minutes. For freezing, wrap tightly and store for up to 2 months.
