  • 1 medium spaghetti squash
  • 2 cups marinara sauce store-bought or homemade
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • Chopped fresh basil for garnish optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the spaghetti squash: Cut the squash in half lengthwise and scoop out the seeds. Place the squash cut-side down on a baking sheet and roast in the oven for about 30-40 minutes, or until the flesh is tender.
  3. Scrape the squash with a fork to create strands and transfer them into a large mixing bowl.
Combining Ingredients
  1. Stir in the marinara sauce, half of the mozzarella cheese, Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix until well combined.
Baking
  1. Spread the mixture evenly in a greased baking dish. Top with the remaining mozzarella cheese.
  2. Bake for about 20-25 minutes, or until the top is bubbly and golden brown.
Serving
  1. Garnish with fresh basil if desired, and serve hot!

Notes

Use a sharp knife when cutting the spaghetti squash as it can be tough. You can prepare the dish a day in advance and store it in the fridge. Feel free to customize toppings like sautéed mushrooms or bell peppers for added flavor.
