Preparation
  1. Start by placing your boneless, skinless chicken thighs into the crockpot.
  2. In a bowl, whisk together the teriyaki sauce, minced garlic, minced ginger, and honey until well combined.
  3. Pour the sauce mixture over the chicken evenly, ensuring each piece is well-coated.
Cooking
  1. Cover the crockpot with the lid and set it to cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  2. If you prefer a thicker sauce, mix the cornstarch with a little water to create a slurry, then stir it into the sauce during the last 30 minutes of cooking.
Serving
  1. Once cooked, shred the chicken using two forks and serve it over rice or noodles.
  2. Garnish with sesame seeds and green onions.

Notes

You can add veggies like bell peppers or carrots to the crockpot for extra nutrition. For a less sweet sauce, add a splash of soy sauce or rice vinegar.
