Preparation
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a large bowl, combine the pumpkin puree, vegetable oil, sugar, and brown sugar until well mixed.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually stir the dry ingredients into the wet mixture until just combined; do not overmix.
- Spoon the batter into the prepared cupcake liners, filling each one about 2/3 full.
Baking
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Frosting
- Frost with cream cheese frosting once cooled and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. You can freeze wrapped cupcakes for up to 3 months and thaw them as needed.
