Main Ingredients
  • 1.5 pounds boneless, skinless chicken thighs or breasts
For the Sauce
  • 1 cup teriyaki sauce store-bought or homemade
  • 1 tablespoon minced garlic
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground ginger
Optional Vegetables
  • 1 cup broccoli florets optional for extra veggies
For Garnish
  • sliced green onions
  • sesame seeds

Method
 

Preparation
  1. Place your chicken thighs or breasts at the bottom of the Crockpot.
  2. In a bowl, combine teriyaki sauce, minced garlic, honey, rice vinegar, and ground ginger. Stir until well mixed.
  3. Pour the sauce over the chicken, ensuring it’s well-covered.
  4. If you’re including broccoli, add it on top now.
Cooking
  1. Cover the Crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
Serving
  1. When done, shred the chicken with two forks and mix it back into the sauce.
  2. Garnish with sliced green onions and sesame seeds before serving.

Notes

For a thicker sauce, remove the chicken about 30 minutes before the cooking time ends and let the sauce simmer with the lid off. Ingredient substitutions include using tofu or tempeh for a vegetarian option or pork instead of chicken. Ensure enough sauce is present to avoid dry chicken.
