  • 1 lb ground beef (or turkey) Can substitute with lean ground turkey or chicken.
  • 1 onion, diced
  • 2-3 cloves garlic, minced
  • 15 oz can crushed tomatoes
  • 2 cups beef broth Can simmer for extra flavor if desired.
  • 1 tsp Italian seasoning
  • 1 cup heavy cream Adds richness to the soup.
  • 8 oz lasagna noodles, broken into pieces Cook according to package instructions.
  • 1 cup ricotta cheese Stir in for creaminess.
  • 1 cup shredded mozzarella cheese Reserve half for topping.
  • to taste salt and pepper
  • to garnish Fresh basil Adds freshness to the dish.

Preparation
  1. In a large pot over medium heat, brown the ground beef and diced onion until the meat is fully cooked. Drain any excess fat.
  2. Mix in minced garlic, followed by the crushed tomatoes. Stir well to combine.
  3. Pour in beef broth and season with Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
  4. Add the heavy cream and stir until everything is well combined.
  5. Toss in broken lasagna noodles and cook according to package instructions, usually about 12-15 minutes, until they are al dente.
  6. Once the noodles are cooked, gently stir in the ricotta cheese and half of the mozzarella cheese.
  7. Serve hot, garnishing each bowl with more mozzarella cheese and a sprinkle of fresh basil.

Notes

Ingredient swaps can be made for a healthier version. It's recommended to cook noodles separately to prevent them from becoming too soft. Leftovers can be stored for up to 3-4 days in the refrigerator or frozen for up to 3 months.
