  • 4 pieces boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Begin by halving the baby potatoes and mincing the garlic.
  2. Place the halved potatoes at the bottom of the crockpot and nestle the chicken breasts on top.
Sauce Preparation
  1. In a bowl, combine the heavy cream, garlic, Italian seasoning, salt, and pepper. Stir in the grated Parmesan.
Cooking
  1. Gently pour the sauce over the chicken and potatoes.
  2. Cover the crockpot and set it to low for 6-7 hours or high for 3-4 hours.
Serving
  1. Check that the chicken is fully cooked with an internal temperature of 165°F.
  2. Stir gently to mix the chicken and potatoes with the sauce before serving.
  3. Garnish with fresh parsley if desired, and serve warm.

Notes

Feel free to swap chicken breasts for thighs or use half-and-half instead of heavy cream for a lighter version. Avoid overcrowding the crockpot for even cooking.
