  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)

Preparation
  1. Begin by boiling a large pot of salted water. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for 6-8 minutes, or until the chicken is golden brown and fully cooked.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the heavy cream, bringing it to a simmer. Gradually whisk in the Parmesan cheese until melted and creamy.
  5. Add the cooked pasta to the skillet, tossing well to coat it in the sauce. Adjust seasoning if necessary.

Notes

Store any remaining pasta in an airtight container in the refrigerator for up to 3 days. This dish can also be frozen for up to 2 months. Reheat on the stove over low heat with a splash of cream or chicken broth to loosen the sauce.
