Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with muffin liners or spraying it with non-stick spray.
  2. In a large mixing bowl, combine the pumpkin puree, sugar, eggs, vegetable oil, and vanilla extract. Mix together until well blended.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  5. Scoop the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
  6. Place in the preheated oven and bake for about 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Take the muffins out of the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack. Enjoy your delicious Easy Pumpkin Muffins!

Notes

Use fresh pumpkin puree for more flavor, or if using canned, ensure it’s pure pumpkin. Mixing too much can lead to dense muffins. Adjust spices to your liking.
