Ingredients

Main Ingredients
  • 6 large large eggs
  • 2 cups of milk preferably whole for creaminess
  • 4 medium potatoes, diced can use frozen hash browns for a quicker option
  • 1 unit bell pepper, chopped any color works
  • 1 cup of chopped onions
  • 1 cup of shredded cheese your choice: cheddar, Swiss, or a mix
  • Salt and pepper to taste
  • 2 tbsp of olive oil or butter for greasing the baking dish

Method

Preparation
  1. Preheat your oven to 350°F (175°C). This ensures that your casserole bakes evenly.
  2. Prepare the baking dish: Grease a 9x13 inch baking dish with olive oil or butter to prevent sticking.
  3. Whisk the eggs: In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
Assembly
  1. Layer the ingredients: Start by layering the diced potatoes at the bottom, then add the chopped bell pepper and onions. Pour the egg mixture over the layers.
  2. Sprinkle cheese: Add your choice of shredded cheese evenly on top.
Baking
  1. Place the dish in your preheated oven and bake for 45 minutes, or until the center is set and the top is golden brown.
Serving
  1. Let it cool for a few minutes before slicing into squares. Enjoy with your favorite side salad or toast!

Notes

Consider serving with a fresh green salad, crunchy toast, or fluffy biscuits. Pair with iced tea or lemonade for a refreshing meal.
