Preparation
- Preheat the oven: Set your oven to 300°F (150°C).
- Blend It Up: In a blender or food processor, combine the cottage cheese and eggs. Blend until smooth and creamy.
- Mix in Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, and salt. Then gently fold into the egg-cottage cheese blend.
- Scoop & Shape: Use a spoon or an ice cream scooper to place dollops of the batter onto a lined baking sheet, spacing them a couple of inches apart.
- Bake to Perfection: Bake in the preheated oven for about 25-30 minutes, or until golden brown on top.
- Cool and Enjoy: Allow to cool slightly before serving or storing.
Notes
Store leftovers in an airtight container for up to 3 days. Can be frozen for later use. Reheat in the toaster or oven to regain fluffiness.
