  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup chicken or vegetable broth
  • 1/4 cup freshly squeezed lemon juice
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Cooked pasta (linguine, fettuccine, or your choice)

Method
 

Preparation
  1. Rinse the shrimp under cold water and pat them dry with a paper towel. Season lightly with salt and pepper.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the minced garlic and sauté for about 1 minute, being careful not to burn it.
  4. Add the shrimp to the skillet and cook for 2-3 minutes on one side until they turn pink.
  5. Carefully flip the shrimp, then add the red pepper flakes (if using), broth, and lemon juice. Cook for another 2 minutes until fully cooked.
  6. Remove the skillet from heat and stir in the fresh parsley. Taste and adjust seasoning with more salt and pepper as needed.
  7. Serve the scampi over cooked pasta, garnished with additional parsley and a lemon wedge.

Notes

Use large shrimp for a better bite and ensure not to overcook them. Fresh garlic and parsley provide the best flavor. Store leftovers in an airtight container for up to 2 days, reheating gently on low heat.
