Ingredients
  

Casserole Base
  • 2 cups cooked chicken, diced Grilled or rotisserie chicken works perfectly.
  • 32 oz. bag frozen hashbrowns
  • 10.5 oz. can cream of chicken soup Can be substituted with cream of mushroom soup.
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup onion, diced
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, frozen hashbrowns, cream of chicken soup, sour cream, diced onion, garlic powder, and a bit of salt and pepper. Stir until well mixed.
  3. Pour the mixture into a greased 9×13-inch baking dish and spread it out evenly.
  4. Sprinkle the shredded cheese generously over the top of the casserole.
Baking
  1. Place the dish in the oven and bake for approximately 45 minutes or until the casserole is bubbly and the top is golden brown.
  2. Once done, remove from the oven and let it cool for a few minutes before serving.

Notes

Make ahead for convenience; refrigerate overnight and add an extra 10-15 minutes to the baking time. If freezing, make without cheese, adding it when ready to bake for optimal freshness.
