  • 1 lb chicken breast (cut into bite-sized pieces) You can substitute with shrimp or tofu if desired.
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup bell peppers (sliced—colors of your choice)
  • 1 cup rice (jasmine or basmati) Brown rice is an alternative, adjust cooking time.
  • 2 cups chicken broth Can be low sodium.
Sauces and Seasoning
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the bite-sized chicken pieces, season with salt and pepper, and cook for about 5-7 minutes until golden brown.
  3. Toss in the sliced bell peppers and pineapple chunks, and cook for an additional 3 minutes.
  4. Pour in the rice and chicken broth, along with the soy sauce, garlic powder, and ginger powder. Stir everything together until well combined.
  5. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender.
  6. Fluff the rice with a fork before serving. Garnish with chopped green onions or sesame seeds if desired.

Notes

Store leftovers in an airtight container for up to three days in the refrigerator. To reheat, microwave or reheat in a skillet with a little chicken broth if it seems dry.
