Quesadilla Ingredients
  • 2 pieces flour tortillas Can substitute with corn tortillas or spinach wraps.
  • 1 cup cooked leftover chicken Shredded from grilled, roasted, or takeout.
  • 1 cup shredded cheese Monterey Jack recommended, but cheddar or Pepper Jack can also be used.
  • 1 tablespoon butter or oil For cooking and crispy edges.
  • optional to taste vegetables (onions, peppers, corn, beans, etc.) Customize as desired.

Method
 

Preparation and Cooking
  1. Heat a skillet over medium heat and add butter or oil to prevent sticking.
  2. Place one tortilla in the skillet and sprinkle a generous amount of cheese on top.
  3. Add the shredded chicken evenly on top of the cheese.
  4. Add any additional vegetables or toppings if desired.
  5. Top with more cheese and place the second tortilla over the filling.
  6. Press down on the quesadilla to help the ingredients adhere.
  7. Cook for about 2-3 minutes, then carefully flip the quesadilla when golden brown.
  8. Cook for another 2-3 minutes on the other side until crispy and cheese is melted.
  9. Remove from the skillet and cut into wedges.

Notes

Serve with various dips like salsa, guacamole, or sour cream. Customize toppings and create a 'quesadilla bar' for fun. Can freeze leftover quesadillas and reheat in the oven for best texture.
