  • 1 cup unsalted butter, softened Ensure butter is at room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup maraschino cherries, drained and chopped

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract, ensuring everything is well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the semi-sweet chocolate chips and chopped maraschino cherries until evenly distributed throughout the dough.
Baking
  1. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for about 30 minutes before baking for thicker cookies. Substitute chocolate chips for milk or white chocolate if desired.
