  1. Line an 8x8 inch baking dish with parchment paper or foil, leaving an overhang for easy removal later.
  2. In a medium saucepan over medium heat, combine the white chocolate chips, sweetened condensed milk, and butter. Stir continuously until completely melted and smooth.
  3. Remove from heat, then stir in the vanilla extract and a pinch of salt.
  4. Gently fold in the chopped maraschino cherries, ensuring they’re evenly distributed throughout the fudge mixture.
  5. Pour the fudge mixture into your prepared baking dish and smooth out the top. Refrigerate for at least 2-3 hours, or until firm.
  6. Once set, lift the fudge out of the pan using the overhang, and cut it into squares. Enjoy the chewy, creamy goodness!

Notes

Pairs beautifully with hot cocoa or vanilla ice cream. Store leftovers in an airtight container at room temperature for up to a week, or refrigerate for two weeks. Microwaving for 10-15 seconds can restore its gooey texture.
