Preparation
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, paprika, salt, pepper, and optional red pepper flakes. Whisk until well combined.
- Add the peeled and deveined shrimp to the marinade, making sure each shrimp is well-coated. Allow to marinate in the refrigerator for at least 15 minutes, or up to 1 hour for even more flavor.
Grilling
- Preheat your grill to medium-high heat. If using a grilling basket or skewers, prepare them ahead of time.
- Once the grill is hot, place the marinated shrimp on the grill. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Do not overcook.
- Remove from the grill and serve immediately. Garnish with additional fresh parsley and lemon wedges, if desired.
Notes
Avoid over-marinating to prevent mushy texture. Fresh shrimp is preferable over frozen. If using skewers, soak them in water for 30 minutes beforehand. Monitor the grill to prevent overcooking.
