Ingredients
  

For the marinade
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 tablespoons minced garlic
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes optional for heat
  • to taste Salt and pepper
For the shrimp
  • 1 pound large shrimp (peeled and deveined) Use fresh shrimp for best flavor

Method
 

Preparation
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, paprika, salt, pepper, and optional red pepper flakes. Whisk until well combined.
  2. Add the peeled and deveined shrimp to the marinade, making sure each shrimp is well-coated. Allow to marinate in the refrigerator for at least 15 minutes, or up to 1 hour for even more flavor.
Grilling
  1. Preheat your grill to medium-high heat. If using a grilling basket or skewers, prepare them ahead of time.
  2. Once the grill is hot, place the marinated shrimp on the grill. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Do not overcook.
  3. Remove from the grill and serve immediately. Garnish with additional fresh parsley and lemon wedges, if desired.

Notes

Avoid over-marinating to prevent mushy texture. Fresh shrimp is preferable over frozen. If using skewers, soak them in water for 30 minutes beforehand. Monitor the grill to prevent overcooking.
