Method
Preparation
- Season the chicken breasts with salt and pepper on both sides.
Cooking the Chicken
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook thoroughly—about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, add the minced garlic and sauté for about a minute until fragrant.
- Toss in the cherry tomatoes and sun-dried tomatoes. Cook for another 2-3 minutes until the tomatoes start to soften.
- Pour in the heavy cream and stir to combine. Bring the mixture to a simmer, allowing it to thicken slightly, about 3-4 minutes.
- Stir in the grated Parmesan cheese until melted and combined.
Cooking the Pasta
- Meanwhile, cook the pasta according to package instructions in a separate pot and drain.
Combining Everything
- Slice the cooked chicken, add it back into the creamy tomato mixture, and then mix in the pasta until the whole dish is coated with that luscious sauce.
Serving
- Plate up your Marry Me Chicken Pasta and garnish with fresh basil.
Notes
This dish can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm it in a skillet over low heat, adding a splash of cream to keep the sauce from drying out. Freezes beautifully for up to 3 months.
