Main Ingredients
  • 2 cans chickpeas, rinsed
  • 2 chopped tomatoes (preferably Roma)
  • 1 diced cucumber (preferably English) Less watery
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup diced red onion For a sharp flavor
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped Optional but recommended
  • 1/4 cup fresh mint, chopped Optional but recommended
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice Adjust to taste
  • 2 cloves minced garlic
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 teaspoon Dijon mustard Optional for added flavor

Method
 

Preparation
  1. Rinse the chickpeas thoroughly under cold water and place them in a large bowl.
  2. Add the chopped tomatoes, diced cucumber, red onion, olives, crumbled feta, and chopped parsley and mint to the bowl.
Dressing
  1. In a separate jar or bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Pour the dressing over the salad ingredients in the large bowl.
  3. Gently mix everything together until well coated with the dressing.
  4. Taste and adjust seasoning with more salt or lemon juice if desired.
  5. Let the salad chill for at least 10 minutes before serving to enhance flavors.

Notes

This salad is very forgiving - feel free to swap ingredients as per your preference. For best results, avoid adding feta until serving if you want to keep it fresh. It stores well in the fridge for up to three days.
