  • 4 large large russet potatoes For best texture.
  • 2 tablespoons olive oil For mixing with potato insides.
  • 1 teaspoon ground cumin For flavor.
  • 1 teaspoon smoked paprika For smokiness.
  • 1/2 teaspoon chili powder Adjust to taste for spiciness.
  • salt and pepper to taste Salt and pepper For seasoning.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1/2 cup sour cream For serving.
  • Fresh cilantro For garnish.
  • Chopped green onions For garnish.
  • Sliced jalapeños Optional, for garnish.

Method
 

Preparation
  1. Wash the russet potatoes thoroughly and pat them dry. Poke holes in each potato with a fork.
Cooking
  1. Place the potatoes in a microwave-safe dish and cover with a damp towel. Microwave on high for about 10-12 minutes until soft, turning halfway.
  2. Allow the potatoes to cool slightly, cut each in half lengthwise, and scoop out some of the insides into a bowl.
Mixing
  1. Combine the potato insides with olive oil, ground cumin, smoked paprika, chili powder, salt, and pepper until creamy.
Stuffing and Baking
  1. Spoon the mixture back into the hollowed halves of the potatoes and top with shredded cheese.
  2. Preheat your oven to 425°F (220°C). Place the potatoes in the oven for about 10-15 minutes or until the cheese is bubbling and golden.
Garnishing and Serving
  1. Remove the potatoes from the oven and add a drizzle of sour cream, chopped cilantro, green onions, and jalapeños if desired.
  2. Serve and enjoy with your favorite side dishes!

Notes

For the best texture, use russet potatoes. Customize spices to your taste. Don't skip the toppings for added flavor. Keep an eye on baking time to prevent burning.
