Ingredients
  

For the Chicken
  • 4 pieces chicken thighs or breasts Can use drumsticks as an alternative.
  • 2 tablespoons olive oil For marinating the chicken.
  • 3 cloves garlic Minced, to mix into the chicken marinade.
  • 1 each lemon Juiced and zested to enhance flavor.
  • Salt to taste
  • Pepper to taste
For the Potatoes
  • 1.5 pounds baby potatoes Cut into even chunks.
  • 2 tablespoons olive oil For tossing the potatoes.
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix the olive oil, minced garlic, lemon juice, salt, and pepper.
  3. Add the chicken to the bowl, ensuring it is well coated. Let it marinate for at least 10 minutes.
  4. In another bowl, toss the potato chunks with olive oil, salt, and pepper.
Cooking
  1. Place the potatoes on a baking sheet and roast in the preheated oven for 15-20 minutes.
  2. After the initial roasting, nestle the marinated chicken pieces among the potatoes on the pan.
  3. Continue to bake everything for an additional 25-30 minutes, or until the chicken is cooked through and the potatoes are crispy.
  4. Optionally, switch on the broiler for 2 minutes at the end for an extra crispy finish.

Notes

Don’t crowd the pan to avoid steaming. You can add green beans or asparagus in the last 15 minutes. Serve with Greek yogurt or tzatziki for extra flavor.
