Preparation
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of the prepared pan and bake for 10 minutes. Remove from oven and let cool.
- In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Then mix in the vanilla extract and sour cream until fully combined.
- In two small bowls, divide the cheesecake batter in half. Mix the pureed strawberries into one half and the pureed blueberries into the other.
Assembly and Baking
- Pour half of the vanilla cheesecake filling over the crust. Spoon dollops of strawberry and blueberry batter over this layer, and then pour the remaining vanilla filling on top. Swirl everything together with a knife or toothpick for a pretty effect.
- Bake the cheesecake in the preheated oven for 55-60 minutes or until the center is set and slightly jiggly. Let it cool at room temperature for an hour, then refrigerate for at least 4 hours (preferably overnight) to firm up.
