  • 5 cups popped popcorn (plain, unsalted preferred) Use air popped or stovetop method
  • 1 cup diced celery
  • 1 cup diced bell pepper (any color)
  • 1/2 cup diced red onion
  • 1/2 cup frozen peas (thawed)
  • 1 cup ranch dressing (or dressing of your choice)
  • Salt and pepper to taste
  • Optional: shredded cheese (like cheddar) or croutons For added flavor and crunch

Preparation
  1. Start by popping 5 cups of plain popcorn. You can use an air popper or stovetop method. Once popped, let it cool.
  2. While the popcorn cools, dice the celery, bell pepper, red onion, and thaw the frozen peas.
  3. In a large mixing bowl, combine the popcorn, diced vegetables, and peas.
  4. Pour the ranch dressing over the mixture and gently fold until all ingredients are coated evenly.
  5. Add salt and pepper to taste. If desired, mix in some shredded cheese for extra richness.
  6. For the best flavor, let it sit in the fridge for about 30 minutes before serving, but it can be enjoyed immediately!

Notes

Store leftover salad in an airtight container in the refrigerator for up to 2 days. To revive crunch, add a sprinkle of fresh popcorn just before serving.
