  • 1 cup pumpkin puree Canned or homemade
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened Should be creamy, not melted
  • 1 large egg At room temperature
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Add-ins
  • 1 cup chocolate chips Semi-sweet or milk chocolate

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, granulated sugar, and pumpkin puree. Beat in the egg and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Gently fold in the chocolate chips until evenly distributed throughout the dough.
  6. Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, leaving space between each cookie.
Baking
  1. Bake for 10 to 12 minutes, or until the edges are lightly golden.
Cooling
  1. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  2. Enjoy with a glass of milk or your favorite beverage!

Notes

For best results, chill the dough for about 30 minutes before baking. Feel free to customize your cookies by adding nuts or dried fruits for added texture.
