Ingredients
  

For the batter
  • 1 cup pumpkin puree (canned or homemade)
  • 1 cup all-purpose flour
  • 1 piece egg
  • ¼ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup milk
  • Oil for frying (canola or vegetable)

Preparation
  1. In a large bowl, combine the pumpkin puree, egg, sugar, and milk. Beat until the mixture is smooth and well combined.
  2. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the wet ingredients. Stir gently until just combined; be careful not to overmix!
  3. In a large skillet, pour enough oil to cover the bottom (about ½ inch deep) and heat over medium-high heat. You can test if the oil is ready by dropping in a small spoonful of batter—if it sizzles, it’s time to fry!
Cooking
  1. Using a spoon, drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.
  2. Remove the fritters and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly before serving with honey, syrup, or your favorite topping!

Notes

Keep an eye on the oil’s temperature. Add-ins like chocolate chips or nuts can be added for variation. Store in an airtight container for up to 3 days or freeze for a month.
