- In a large bowl, combine the pumpkin puree, egg, sugar, and milk. Beat until the mixture is smooth and well combined.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the wet ingredients. Stir gently until just combined; be careful not to overmix!
- In a large skillet, pour enough oil to cover the bottom (about ½ inch deep) and heat over medium-high heat. You can test if the oil is ready by dropping in a small spoonful of batter—if it sizzles, it’s time to fry!
Cooking
- Using a spoon, drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.
- Remove the fritters and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly before serving with honey, syrup, or your favorite topping!
Notes
Keep an eye on the oil’s temperature. Add-ins like chocolate chips or nuts can be added for variation. Store in an airtight container for up to 3 days or freeze for a month.
