Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked shredded chicken, cream of chicken soup, sour cream, frozen mixed vegetables, cheddar cheese, onion powder, garlic powder, salt, and pepper. Stir until everything is well mixed.
- Grease a 9×13-inch casserole dish with cooking spray or a bit of oil to prevent sticking.
- Pour the chicken mixture into the prepared casserole dish, spreading it evenly.
- In a separate bowl, mix the crushed Ritz crackers with the melted butter until fully coated. Sprinkle this mixture evenly over the top of the chicken casserole.
Baking
- Place the casserole in the preheated oven and bake for about 25-30 minutes or until the topping is golden brown and the casserole is heated through.
- Allow the casserole to cool for a few minutes before serving.
Notes
For ingredient substitutions, swap out mixed vegetables for your favorites like green beans or broccoli. To save time, use store-bought rotisserie chicken. Avoid overcooking to prevent dryness.
