  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package (10 oz) fresh tortellini
  • 2 cups fresh spinach leaves
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Preparation
  1. In a large pot over medium heat, add the Italian sausage. Cook until browned, about 5-7 minutes. Break it into small pieces with a spoon as it cooks.
  2. Once the sausage is cooked, add the diced onion and minced garlic. Stir and cook for another 2-3 minutes until the onion becomes translucent and fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Once boiling, add the tortellini to the pot and cook according to package instructions (usually around 3-5 minutes).
  5. Stir in the fresh spinach leaves until they are wilted.
  6. Reduce the heat, then add the heavy cream and Italian seasoning. Stir to combine, seasoning with salt and pepper to taste.
  7. Ladle the soup into bowls and top with grated Parmesan cheese if desired. Enjoy your delightful autumn meal!

Notes

For substitutions, consider replacing the heavy cream with half-and-half or a non-dairy milk like almond milk. Ensure tortellini are cooked just right: tender but firm to the bite. When reheating leftovers, add a bit of water or broth to loosen the soup.
