Preparation
- If you don't have cooked rice ready, start by preparing 2 cups of white or brown rice according to package instructions.
- Heat olive oil in a large skillet over medium-high heat.
Cooking
- Add diced onions and garlic to the skillet and sauté for about 2 minutes until fragrant.
- Toss in the sliced bell peppers and continue sautéing until tender, approximately 5 minutes.
- Push the vegetables to the side of the skillet, add the ground beef, and cook until browned, about 5-7 minutes.
- Stir in the soy sauce along with salt and pepper to taste, then cook for an additional minute.
- Divide the cooked rice into bowls and top each with the beef-pepper mixture.
- Finish with optional toppings like chopped scallions, lime, or sesame seeds.
Notes
Store in an airtight container in the refrigerator for up to 3 days. The beef and pepper mixture can be frozen for up to 3 months.
