  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 2 cups cooked rice White or brown rice.
  • 1 whole red bell pepper, sliced
  • 1 whole yellow bell pepper, sliced
  • 1 whole green bell pepper, sliced
  • 1 whole onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  • chopped scallions
  • lime wedges
  • sesame seeds

Method
 

Preparation
  1. If you don't have cooked rice ready, start by preparing 2 cups of white or brown rice according to package instructions.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Add diced onions and garlic to the skillet and sauté for about 2 minutes until fragrant.
  2. Toss in the sliced bell peppers and continue sautéing until tender, approximately 5 minutes.
  3. Push the vegetables to the side of the skillet, add the ground beef, and cook until browned, about 5-7 minutes.
  4. Stir in the soy sauce along with salt and pepper to taste, then cook for an additional minute.
  5. Divide the cooked rice into bowls and top each with the beef-pepper mixture.
  6. Finish with optional toppings like chopped scallions, lime, or sesame seeds.

Notes

Store in an airtight container in the refrigerator for up to 3 days. The beef and pepper mixture can be frozen for up to 3 months.
