Preparation
  1. In a bowl, combine minced garlic, chopped rosemary, olive oil, salt, black pepper, and lemon juice to create the marinade.
  2. Place the lamb chops in a large resealable bag or a shallow dish. Pour the marinade over the chops, ensuring they are well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 3 hours for deeper flavor.
Cooking
  1. Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to burn until they are covered with white ash.
  2. Remove the lamb chops from the marinade, allowing excess marinade to drip off. Place the chops on the grill and cook for about 4-6 minutes per side for medium-rare, or longer if you prefer them well done.
  3. Once cooked to your liking, remove the lamb from the grill and let it rest for about 5 minutes to allow the juices to redistribute within the meat.
