Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the pumpkin puree, melted butter, granulated sugar, and egg. Mix until you have a smooth, consistent batter.
- In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring until fully combined. The dough will be quite soft.
- Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet, leaving enough space in between for spreading.
Baking
- Place the baking sheet in the oven and bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on a wire rack.
Frosting
- While the cookies cool, beat together the cream cheese, softened butter, powdered sugar, vanilla extract, ground cinnamon, and milk until smooth and creamy.
- Once the cookies are completely cooled, generously frost each cookie with the cinnamon frosting.
