  • 1 cup all-purpose flour
  • 1/2 cup cream cheese, softened Room temperature for easier mixing.
  • 1/2 cup unsalted butter, softened Room temperature for easier mixing.
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, diced Gently fold in to keep the cookie texture light.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the softened cream cheese, butter, and sugar until fluffy. Add the vanilla extract and mix well.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Gently fold in the diced strawberries, being careful not to overmix.
  5. Drop spoonfuls of dough onto the prepared baking sheet with space between them.
  6. Bake for 10-12 minutes or until edges are lightly golden. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to one week in the refrigerator or freeze for up to three months. Thaw at room temperature or microwave for a few seconds before serving.
