Preparation

- In a mixing bowl, combine peaches, sugar, lemon juice, and cinnamon. Set aside.
- In another bowl, mix flour, sugar, baking powder, and salt.
- Add the chilled butter and milk to the flour mixture, mixing until just combined.
Assembly and Cooking
- Pour peach mixture into a greased baking dish.
- Pour the batter over the peaches without stirring.
- Bake for 40-45 minutes or until golden and bubbly.
Serving
- Serve warm with a scoop of vanilla ice cream or whipped cream.
Notes
Make ahead by refrigerating covered overnight. Reheat in microwave or oven. Add a splash of milk or cream when reheating if it appears dry.
