Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Stir in taco seasoning and a splash of water, cooking until well combined.
Layering and Baking
- In a greased casserole dish, layer half of the tortilla chips, followed by half of the seasoned beef, black beans, corn, and half of the salsa. Sprinkle with half of the cheese.
- Repeat the layers with the remaining chips, beef, black beans, corn, salsa, and top it all off with the remaining cheese.
- Cover the casserole with foil and bake in the preheated oven for about 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for a few minutes before garnishing with your favorite toppings like sour cream, lettuce, and tomatoes. Dig in!
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days. For freezer storage, use a freezer-safe container for up to 2 months. Reheat in the oven at 350°F (175°C) for about 15-20 minutes or microwave individual portions.
