- In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
- In a greased casserole dish, layer the cubed bread evenly. Sprinkle the chopped spinach, diced bell peppers, and diced tomatoes over the bread.
- Pour the egg mixture over the layered veggies and bread. Gently press down on the layers to ensure everything is soaked in the egg mixture.
- Sprinkle the shredded cheese evenly over the top. Cover the casserole with plastic wrap and refrigerate overnight (about 8 hours).
Baking
- Preheat your oven to 350°F (175°C). Remove the plastic wrap and bake the casserole for 45-55 minutes, or until the center is set and the top is golden brown.
- Let it cool for a few minutes, then slice and serve warm.
Notes
You can substitute vegetables and cheese to suit your taste. Ensure to use stale bread for the best texture.
