  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch dressing mix
  • 1 can cream of chicken soup
  • 1/2 cup chicken broth
  • 8 oz. cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Fresh parsley for garnish (optional)

Preparation
  1. Place chicken breasts at the bottom of your crock pot. Do not dice or slice.
  2. In a separate bowl, combine ranch dressing mix, cream of chicken soup, and chicken broth. Whisk until smooth.
  3. Pour the sauce over the chicken to ensure it's well covered.
  4. Add softened cream cheese on top of the sauce.
  5. Cover the crock pot, set it to low, and cook for 6-8 hours, or on high for about 4 hours.
  6. About 30 minutes before serving, stir in the shredded cheddar cheese.
  7. Once cooked through, shred the chicken using two forks for a saucy consistency.

Notes

For best results, avoid skipping the cream cheese as it gives the dish a rich creamy texture. Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months. Reheat gently adding a splash of chicken broth if desired.
