Ingredients
  

Main Ingredients
  • 4 cups cubed watermelon Fresh and ripe watermelon
  • 8 ounces feta cheese Block feta is recommended, crumbled
  • 1 handful fresh mint Torn into pieces
Dressing
  • 2 tablespoons olive oil Extra virgin is preferable
  • 1 tablespoon lime juice Freshly squeezed
  • 1 teaspoon honey Optional for sweetness
  • to taste black pepper Cracked, optional

Method
 

Preparation
  1. Cube the watermelon and place it in a large bowl.
  2. Crumble the feta cheese with your fingers and add it to the watermelon.
  3. Tear the fresh mint leaves and add them to the mixture.
  4. In a separate small bowl, whisk together olive oil, lime juice, honey, and cracked black pepper.
  5. Pour the dressing over the salad and gently toss to combine without smashing the ingredients.
  6. Chill the salad for 10 minutes before serving.

Notes

For variations, consider adding thinly sliced red onions, jalapeños for heat, or substituting mint with basil. Toasted sunflower seeds also add a nice crunch.
