- Cube the watermelon and place it in a large bowl.
- Crumble the feta cheese with your fingers and add it to the watermelon.
- Tear the fresh mint leaves and add them to the mixture.
- In a separate small bowl, whisk together olive oil, lime juice, honey, and cracked black pepper.
- Pour the dressing over the salad and gently toss to combine without smashing the ingredients.
- Chill the salad for 10 minutes before serving.
Notes
For variations, consider adding thinly sliced red onions, jalapeños for heat, or substituting mint with basil. Toasted sunflower seeds also add a nice crunch.
