  • 4 large chicken thighs, bone-in and skin-on
  • 1/4 cup unsalted butter, melted
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 6 cloves garlic, minced
  • 2 teaspoons dried oregano Can be substituted with rosemary or thyme.
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Rinse the chicken thighs under cold water and pat them dry with a paper towel.
  2. In a bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Whisk well until everything is incorporated.
  3. For extra flavor, you can sear the chicken thighs in a hot skillet for 3-4 minutes on each side until golden brown. This step is optional but recommended.
Cooking
  1. Add the chicken thighs to the Crock Pot, then pour the lemon garlic mixture over the top, ensuring all the chicken is coated.
  2. Cover the Crock Pot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
Serving
  1. Once done, garnish with fresh parsley if desired and serve with your favorite sides.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat with some chicken broth for added moisture.
