- Rinse the chicken thighs under cold water and pat them dry with a paper towel.
- In a bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Whisk well until everything is incorporated.
- For extra flavor, you can sear the chicken thighs in a hot skillet for 3-4 minutes on each side until golden brown. This step is optional but recommended.
Cooking
- Add the chicken thighs to the Crock Pot, then pour the lemon garlic mixture over the top, ensuring all the chicken is coated.
- Cover the Crock Pot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
Serving
- Once done, garnish with fresh parsley if desired and serve with your favorite sides.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat with some chicken broth for added moisture.
